Моя семья - интернациональная и мне всегда было очень интересно узнавать обычаи, рецепты разных стран, особенно когда это касается семьи и есть кому рассказать, показать, научить. Моя бабушка родилась в Украине. Вы наверное слышали выражение «Своя рубашка ближе к телу», и наверняка знаете национальные вышиванки в Украине. Так вот, во многих местностях на свадьбу мужчины надевали две рубашки. Сверху была та, что вышила любимая, а БЛИЖЕ К ТЕЛУ рубашка вышитая мамиными руками, родовая (по словам бабушки). Но рассказать я хотел не об этом, а о том, что у бабушки с детства была привычка: когда они со своей мамой ходили в гости, мама пекла каравай и вот с таким подарком они шли. Шло время, бабушка выросла (смешно звучит), гусей пасти всю жизнь она не мечтала, а мечтала уехать в Москву и выучиться на стоматолога. Так и сделала. Потом война, и она ушла на фронт. Там спасала раненых, а так же лечила зубы . Ее портативная бормашинка до сих пор хранится у нас. А рецепт мази, которую они делали в окопах, до сих пор используем мы в своей жизни, смазывая ранки и царапинки от млада до велика. Снова я ушел в сторону‍♂. Так вот, война закончилась, настала мирная жизнь, а бабушка, приезжая к нам в гости, всегда привозила батон белого хлеба, и я ни разу не припомню визит бабушки без него

Happy Monday with mighty loaf that was mixed with dark beer. I just love swapping the water from time to time and dark beer is slowly becoming a favorite. I chased the light and tried to catch the true color of the crumb. Also the beer carries its aroma all through baking but in a very subtle way. Super soft crumb ! Hydration at 82%

My Hercules jumped high yesterday This loaf was supposed to be gifted but when I saw this oven spring, I had to slice it. Of course I had to bake another one to replace that one. And again it jumped so high that I wanted to slice it again but didn’t. So this loaf is a mix of @kingarthurflour Organic bread flour and @breadtopia White Kamut which I fell in love with. The dough was so smooth, buttery, gorgeous ! Autolyse was 3h 30min. Hydration at 83% Levain was just at peak. Bulked for 8h with four folds.

Happy Monday! It’s a new day, new loaf and new discovery! I had no idea that black garlic existed till @janice_ava_roland mentioned it on her page. Then @fullproofbaking baked a loaf with it on the same day I saw it at the store and I had to rush back and get it. Garlic bread has always been favorite in our household and black garlic just brought it to another level. It’s sweet and tangy. I haven’t tasted anything like it before. And I just found out how to make it myself. Rice cooker is on the way as I write this My loaf turned out fantastic and I couldn’t stop staring at it. I’ll be baking it on repeat. Mixed with @bobsredmill artisan bread flour and @breadtopia bolted rye flour at 82% hydration. Autolyse was 3h 50min, bulked for 6h 30min at 75F. It jumped beautifully in the oven. Very pleased and happy today!
