Just purchased our @oxo Spiralizer yesterday and had to put it to the test. Making carrot and zucchini noodles was a breeze! I haven’t posted in awhile! It’s not for lack of photos, I have simply been exhausted! I’ve been diagnosed with SIBO (small intestinal bacterial overgrowth) and currently undergoing treatment. Part of that treatment is the SIBO Specific Diet, a blend of FODMAP and SCD. To say this diet is restrictive is an understatement! Thankfully between Derek and myself, we’ve been able to make some pretty tasty recipes. Over the next couple of weeks I hope to have the energy to share some of these for others who may be going through SIBO treatment! Today I attempted a Paleo banana pancake to satisfy some serious carb cravings! They were pretty darn good! RECIPE 4-5 roma tomatoes 1⁄4 cup @califiafarms Go Coconuts 1⁄3 cup vegan mayo 1 T sriracha 1 tsp Sugar 1⁄4 tsp Salt 1 T Sesame oil 1 T sesame seeds 2 tsp soy sauce ~ Boil water in a big pot. In the meantime, poke holes all around your tomatoes. Place in the boiling water until you see the skin start to form off a bit. Quickly place in ice water and start to peel off the skin of the tomatoes (they should come right off). + Slice around the seeds of the tomatoes and roughly chop. Place in a bowl with vegan mayo, go coconuts, sriracha, sugar, salt, sesame oil, sesame seeds and soy sauce. Next, strain to get some of the liquid out, but don’t strain all the way - you want some of the liquid.
