Paleo Kimchi Recipe
Let’s talk about all of the benefits of eating kimchi (fermented Korean napa cabbage).

Kimchi is a staple in Korean households as side dish for thousands of years. It tastes spicy and sour due to the fermentation process which yields a lot of health benefits.

How do you eat this?
You can eat is as a side dish along with your meals. It goes great on dishes like bibimbap. If it ferments for too long, it can get very sour but don’t throw it out! You can throw it into soups or even use it in a stir fry with meat or even rice!

Store bought kimchi can come with MSG, sugar and a lot of unnecessary additives. Try this Paleo version!

Makes 3 L of Kimchi
Recipe:
1 large napa cabbage, sliced 1“ wide.
3 tablespoons coarse sea salt
1 large carrot, julienned
1 small daikon radish, julienned
2 green onion stalks, julienned
4-5 garlic cloves
1/3 cup ginger, chopped
1 apple, peeled and chopped (I used gala)
3 tablespoons Korean red pepper flakes (coarse)
2 tablespoons fish sauce (paleo)

Direction:
1. In a large mixing bowl, add napa cabbage and 2 tbsp of salt and massage with hands until it’s well combined.
2. Add in carrots, daikon and green onions and rest of salt and continue massaging until everything is well combined. Set aside.
3. In a food processor, blend together garlic, ginger, apple, pepper flakes and fish sauce. Blend until smooth texture is achieved.
4. Pour mixture into cabbage mix and continue mixing until well combined (use thongs or wear gloves because the pepper flakes will burn your bare hands!)
5. Start transferring the cabbage mix into mason jars including all of the brine. Seal tight. Leave out away from sunlight to ferment for 3-5 days. Try a little piece daily until the desired amount of sourness is achieved. Then transfer the jars to the refrigerator to slow down fermentation process.

An international team of researchers led from the University of Copenhagen and Steno Diabetes Center Copenhagen report when 3 antibiotics were given to young healthy men for 4 days it caused an almost COMPLETE ERADICATION of gut bacteria, followed by a gradual recovery of most bacterial species over a period of six months.⠀⠀

After the six months, however, the study participants were STILL missing nine of their common beneficial bacteria and a few new potentially non-desirable bacteria had colonized the gut. ⠀⠀
