Funfetti Mini Cakes are the Tea Treats we are bringing to @ketocollabs Ketofied Tea Party

Funfetti Mini Cakes
Ingredients
1 cup almond flour
1/4 tsp Himalayan salt
1/2 tsp baking soda
1/3 cup + 2 tbs Erythritol
1/4 cup Olive oil
1/2 cup sour cream
1 egg
1 tsp Vanilla
Directions *Preheat oven 350 degrees
*Spray cake pan with olive oil cooking spray
*In a large bowl mix almond flour, salt and baking soda, set aside
*In a small bowl mix erythritol , olive oil, sour cream, egg & Vanilla *Add wet ingredients to dry ingredients and mix well
*Mix in @thesprinklecompany sprinkles *Bake 20-25 mins *Let cool (I put them in the fridge so they wouldn’t crumble when I cut them)
*Cut into mini squares ————————————————————————
Cream Cheese Frosting * 1/4 cup butter, softened
* 1 package (8 ounces) cream cheese, softened
* 1/2 tsp vanilla extract
* 2-3 tbsp almond milk
* 1/4 tsp salt
* 1 cup Powdered Erythritol
Directions *In a large bowl, beat butter, cream cheese, vanilla, almond milk and salt until creamy
*Add powdered erythritol and beat until creamy and smooth. Add more almond milk if the mixture is too thick.
*Pipe in the middle of each cake square & on top
*Top them off with @thesprinklecompany sprinkles
