sundays every week for me mean loads of fresh organic leafy greens for the week my staples are always kale and spinach for juices and smoothies and then i alternate whatever is in season or catches my eye this week there was some beautiful rainbow chard (i mean LOOK AT THAT COLOUR ) and parsley along with some coriander that I couldn’t fit into this little leafy spread its so important to get a variety of leafy greens in your diet for fiber, iron, vitamin’s K, C, E and A, essential minerals, chlorophyll and and phytonutrients ⚡️these leafy veggies are honestly a nutrient powerhouse and such an important part of a BALANCED diet ☘️ if you arent into big green juices or smoothies you can chop greens up nice and small (the finer you chop them the less you’ll notice them) and add them to curries, soup , rice dishes (kale is great in vegan fried rice style meals), stir fries, pasta (spinach is amazing with pesto or tomato based pasta), with your morning baked beans on toast or a simple salad the options really are endless! . So next time you’re making a meal think to add some finely chopped greens and extra herbs (don’t underestimate the power of herbs!) into your food to quickly and easily next level your health and increase your daily veg intake!

ONE PAN SKILLET ITALIAN POTATO, KALE and TOMATO HASH! (After vs. Before) • • Deets: add some ghee (I used @fourthandheart Himalayan salt ghee) or oil to a cast iron skillet and heat on medium high, then add chopped onion and sauté for about 2 minutes, reduce to medium and add chopped potatoes (I used fingerlings), salt, onion powder, garlic powder, pepper, dried thyme, dried oregano, dried basil and paprika. Stir and cover for about 5 minutes (give the potatoes a stir once or twice), then add some chopped kale, garlic and grape tomatoes and mix together, cover again for about 4-5 minutes (stirring again a couple times...tomatoes should become soft and may pop). You’re definitely going to want to make this Paleo, Whole30 + Keto chicken burrito bowl! It’s likely to become a weekly staple you put on repeat, and the leftovers are just as good as the day you make it, maybe better! This easy burrito bowl recipe is flavorful and might just remind you of a Chipotle chicken burrito bowl! ⁣ ⁣ Ingredients⁣ For the seasoning:⁣ * 2 tsp chili powder⁣ * 1 tsp cumin⁣ * 1/2 tsp sea salt⁣ * 1/2 tsp ground pepper⁣ For the chicken:⁣ * 1 tbsp avocado oil⁣ * 1.5 lbs boneless chicken thighs⁣ For the bowls:⁣ * 6 cups spinach (or greens of choice)⁣ * 1/4 cup cilantro, chopped⁣ * 1/2 red onion, finely diced⁣ * 1 lime, cut into wedges⁣ * 2 avocados, diced⁣ * 1/4 tsp garlic powder⁣ * 4 cups cauliflower rice⁣ * 1/4 cup salsa⁣ * 1 tbsp avocado oil⁣ * Salt and pepper⁣ ⁣ Instructions⁣ 1. Make the seasoning by mixing the seasoning ingredients in a small bowl. Season chicken on both sides with seasoning mix.⁣ 2. Heat a large skillet over medium heat and add avocado oil. Once hot, place chicken thighs in and cook, undisturbed, for 5-6 minutes. Flip and cook another 5-6 minutes until cooked through. Remove and set aside.⁣ 3. Prep greens, cilantro, onion, lime and avocados as noted. ⁣ 4. Place avocados, 1/2 of the diced red onion (1/4 onion total) and garlic powder in a bowl. Mix together well, slightly smashing the avocado. Squeeze in a couple of lime wedges. Taste and season with salt and pepper and set aside.⁣ 5. Prepare cauliflower rice by heating the same skillet you cooked the chicken in over medium heat. If needed, add some avocado oil to the skillet. Once hot, add cauliflower rice and salsa and cook, stirring occasionally for 3-5 minutes until the rice is softened and warm. Taste and season with salt and pepper as desired.⁣ 6. Chop chicken into bite sized strips and make your bowls. Start with a bed of greens and add in everything else - chicken, cauli rice, red onion, cilantro, and mashed avocados.
