Mediterranean burger bowls going down tonight for dinner. These are one of my go to’s for a flavorful burger combination and they are super easy to prep. I paired it with some air fried sweet potato fries, avocado, and greens for a well balanced meal.

Chicken Mediterranean burgers:
Makes 10-12 small patties
1/2 cup chopped cilantro
1/2 of a zucchini
1/3 cup sundried tomatoes in olive oil
1 red bell pepper
1 lb @buyranchdirect ground chicken
1/3 cup diced red onion
Salt + pepper
1 tsp coriander
1/2 tsp cumin
1/4 tsp turmeric
Optional add in: 1/2 cup feta cheese (omit if doing a whole30)
Instructions
1. Add your cilantro, onion, bell pepper, zucchini to a food processor and pulse a couple times for a quick chop
2. Sauté cilantro, onion, bell pepper, Sun dried tomatoes for a few minutes
3. Let veggies cool completely
4. Add veggies to ground chicken, along with feta Cheese, and seasoning, and mix
5. Form into patties and cook a few minutes each side on a grill pan with avocado oil.

Who needs to eat out when you can make your own delicious meals at home? I don’t have any good options here in Corona, so you’ll always find me in my kitchen making the foods we are craving in healthier ways. Like these instant pot bbq ribs, instant pot potato salad, and roasted broccoli. Now who wants to come over?!?

Instant pot ribs
1 cup water
1/2 cup apple cider vinegar
3.5 lbs @buyranchdirect baby back pork ribs
1-2 Tbsp @primalpalate BBQ rub
1/2 cup @primalkitchenfoods Original BBQ sauce
Instructions
1. Add 1 cup water and ½ cup apple cider vinegar to instant pot
2. Add trivet to instant pot
3. Season your ribs with the BBQ rub
4. Place your Ribs in the instant pot on the trivet
5. Close instant pot and seal valve
6. Set instant pot to meat function and cook 25 minutes
7. Let the pressure release naturally (10-15 minutes)
8. Carefully remove ribs, add BBQ sauce and broil for 5-6 minutes in oven

Instant pot potato salad
6 red potatoes chopped
1 cup water
1/4 @primalkitchenfoods cup mayo
1/4 cup @primalkitchenfoods spicy brown mustard
2 tbsp chopped dill
1/3 cup chopped green onions
1 tsp smoked paprika
Salt and pepper to taste
1 lemon juiced
2 tbsp Apple cider vinegar
Instructions
1. Chop your red potatoes into bite size pieces
2. Add water, trivet, and red potatoes to instant pot
3. Cover instant pot, seal valve, set instant pot on steam high pressure for 10 minutes
4. Once done quick release of pressure and let cool
5. Mix mayo, mustard, apple cider vinegar, lemon juice, and pour over the potatoes, and mix
6. Add green onions, dill, paprika, salt + pepper, and mix
7. Store in fridge for an hour before serving
